A crumb coat

Panko, a term showing up on many menus around Milwaukee, is a bread crumb coating applied to meat or fish before frying. Because it isn't crushed as finely as American-style breadcrumbs, it creates more crunch. The coating is used on some Japanese dishes, especially pork cutlets, which are called tonkatsu.
